The Story: Bodegas Zárate is universally revered as the historic benchmark and intellectual home of world-class Albariño. Founded in 1720, this iconic family estate has spent over three centuries tending to the rain-kissed, granite-rich slopes of Val do Salnés—the coolest, most intensely maritime sub-zone in Rías Baixas. In the 1950s, Ernesto Zárate championed the variety's greatness by establishing the famous Cambados Albariño Festival. Today, the estate is guided by the visionary Eulogio Pomares, widely considered one of Spain’s most talented winemakers. Eulogio treats Albariño not as a simple, fruit-forward porch-sipper, but as a noble, age-worthy, and deeply terroir-transparent grape.
Rooted in weathered, decomposed granite soil known locally as xabre, the vines are trained in traditional high pergolas to maximize airflow against the Atlantic dampness. In the cellar, Eulogio exercises immaculate restraint: the hand-harvested fruit ferments spontaneously with native yeasts in stainless steel tanks. Crucially, he blocks malolactic fermentation completely to lock in the grape’s natural, electric acidity, aging the wine on its fine lees for several months. This subtle lees contact builds a silky, textural weight that perfectly balances the wine's roaring, sea-salty backbone.
