They combine grapes grown on the ocean-facing, decomposed granite slopes of the Helderberg sub-region in Stellenbosch (which provide breezy, energetic freshness) with fruit from the dry, sun-drenched, calcium-rich soils of Robertson (which add richness and structure). Fermented partly with native wild yeasts and aged on its fine lees for 5 months in stainless steel with regular stirring (bâtonnage), it skips the heavy wood entirely to focus on pure, vibrant fruit expression.
