The Story: The Mosnier family has been deeply rooted in the soil of Chablis since 1893, and today Sylvain Mosnier carries on that historic legacy with a profound respect for the land. Managing around 15 hectares of sustainably farmed vines (certified HVE Level 3 for high environmental value), the estate treats its ancient, fossil-rich Kimmeridgian limestone and clay soils like a national treasure. Sylvain avoids heavy handed winemaking, opting to ferment and age his village-level Chablis entirely in temperature-controlled stainless steel vats on its fine lees. By completely banishing new oak barrels, he ensures that the raw energy of the fruit and the voice of the unique soil are never hidden.
