To maximize its deep, seductive fruit character, the grapes are exclusively harvested in the chilly dark of night to lock in pristine chemistry. The fruit undergoes a brief cold soak before being small-vat fermented at controlled temperatures. From there, the wine is treated to a full 100% malolactic conversion to enrich its body and mouthfeel before being racked into a customized mix of light and medium-plus toasted oak barrels, where it matures peacefully for 16 months. It is a patient, methodical approach that coaxes out an exceptionally plush, velvety profile without any sharp or rushed edges.
