The Story: Produced at Casa San Matías, one of the oldest and most revered distilleries in Mexico, this estate-grown spirit is a benchmark producer in Los Altos—the rugged, sun-drenched highlands of Jalisco. The Highlands region is legendary because it holds the spirit's most prestigious heritage, thanks to its unique, ancient soils dominated by rich red clay that is bursting with iron. High altitudes and sharp day-and-night temperature shifts blanket the fields, locking in vibrant sweetness while the highland terrains infuse the hand-harvested agaves with an unforgettable fruit-meets-mineral character.
