The Story: Founded in 1945 by the Simoni family, Cantine Monfort is an artisanal winery dedicated to expressing the unique alpine terroirs of Trentino. To cultivate Müller-Thurgau—a historic grape cross between Riesling and Madeleine Royale—Monfort turns to the dramatic, steeply sloping hillsides of the Val di Cembra. Here, vines take root at soaring altitudes in soils rich in volcanic porphyry rock. Cool, crisp air descending from the Dolomites tempers the warm daytime sunshine, creating a wide day-to-night temperature shift that preserves high natural acidity while allowing delicate floral and fruit aromatics to mature slowly.

In the cellar, winemakers focus entirely on preserving high-altitude varietal purity. The hand-harvested grapes undergo gentle pneumatic soft-pressing followed by a cool, temperature-controlled fermentation in stainless steel vats. Completely bypassing oak aging and malolactic conversion, the wine rests in tank to lock in its pale color, electric freshness, and intense aromatic complexity before early bottling.
