The Story: Founded by two college friends with a vision to bridge traditional integrity with Mexico City's vibrant contemporary culture, this distillery is a benchmark producer in Los Altos—the rugged, sun-drenched highlands of Jalisco. The Highlands region is legendary because it holds the spirit's most prestigious heritage, thanks to its unique, ancient soils dominated by rich red clay. High altitudes and sharp day-and-night temperature shifts blanket the estate, locking in vibrant sweetness while the highland terrains infuse the estate-grown agaves with an unforgettable fruit-meets-mineral character. Slow-roasted in brick ovens and uniquely double-distilled using both a traditional pot still and a column still, the spirit is then rested for up to four months in American oak barrels to marry modern crispness with subtle warmth.
