The Story: Established in 1965 by a passionate collective of local grape growers determined to safeguard traditional Tuscan methods, the Castelli del Grevepesa cooperative is a legendary guardian of regional heritage. Their Vin Santo—aptly translated as "Holy Wine"—is a masterclass in extreme patience and centuries-old alchemy. Immediately after a meticulous hand-harvest, the premium white grapes are laid out on mats to air-dry for roughly three months. Once the bunches have shriveled into hyper-concentrated, sugar-rich raisins, they are softly pressed and sealed away in specialized, tiny wooden barrels called caratelli. These barrels are tucked away in the estate's attic (vinsantaia), entirely at the mercy of the changing seasons. As the spring sun warms the roof, an incredibly slow, multi-year fermentation begins, guided by the barrel’s own ancient yeast "mother" (madre). Only after three full years of oxidative slumber is this liquid gold finally awakened.
