For their celebrated "Vaillons" Premier Cru bottling, the family turns to the Left Bank of the Serein River, where old vines root deeply into classic Kimmeridgian limestone layered with prehistoric oyster shells. While Right Bank crus (like Montée de Tonnerre) can be famously brooding and slow to open, the Left Bank terroir of Vaillons naturally coaxes out a more generous, open-knit, and flirtatiously aromatic personality early in its life.
