The Story: From the legendary house of Bodegas Valdespino (founded in 1264), "Don Gonzalo" is an absolute powerhouse. It carries the elite V.O.S. (Very Old Sherry) designation, guaranteeing the liquid has an average age of at least 20 years—though the historic solera itself dates back to the late 19th century and the wine averages closer to 25 years in wood. Unlike Fino which ages under a blanket of yeast, an Oloroso undergoes strict oxidative aging. Left directly exposed to air in oak barrels for over two decades, the wine naturally concentrates into a "tamed beast." Valdespino's genius secret? They blend a tiny, 5–8% splash of rich Pedro Ximénez into the barrel around year 12, allowing it to age alongside the Palomino for another decade. It doesn't make the wine sweet (it sits at a virtually dry 8 grams of sugar), but it perfectly rounds off the sharp, wood-aged edges.
