The Story: Dominique Morel, the meticulous artisan behind Domaine de Gry-Sablon, is widely celebrated for producing masterfully expressive red crus. However, this Bourgogne Blanc is a brilliant, hidden treasure. Because Chardonnay vines planted in the Beaujolais region can legally carry the broader Bourgogne appellation, Morel takes full advantage of his unique argilo-granitique (clay-granite) soils to create a white Burgundy with a distinct, soulful fingerprint. The grapes are sustainably farmed (certified HVE) and harvested early in the morning to lock in natural freshness. In the cellar, a portion of the juice is fermented and aged in new oak barrels with full malolactic fermentation, while the rest rests on its fine lees in stainless steel for up to five months. This meticulous dual approach infuses the wine with traditional Burgundian elegance without losing its raw, energetic fruit pulse.
