This is textbook, terroir-driven Muscadet. After harvest, this wine spends six to eight months resting on its fine lees. That "sur lie" aging process is the true secret of the region, adding a gorgeous, rounded weight to the mid-palate that perfectly balances the fierce natural acidity of the grape. You will find beautiful aromas of white flowers, lime leaf, and a distinct, delicately briny note that reminds you of the nearby ocean. It finishes with a wave of salty citrus fruit that makes your mouth water. If you are eating oysters, crab, or any fresh shellfish, you absolutely need a bottle of Domaine de la Quilla on the table.
