The Story: Sourced from the sun-drenched terraces of the Languedoc, the Saint-Peyre lineup is expertly crafted by Les Costières de Pomérols, a historic winemaking cooperative established way back in 1932. This dedicated collective brings together over 300 local farming families who passionately cultivate vineyards stretching across the rolling hills right next to the saltwater Thau Lagoon. While this maritime microclimate is globally famous for producing razor-sharp Picpoul, the winemakers recognized that the combination of intense southern French sunshine, cooling sea breezes, and ancient clay-limestone soils creates a magnificent playground for Sauvignon Blanc as well. To preserve the grape's raw, uninhibited energy, the fruit is harvested during the cool night hours to prevent oxidation and lock in natural acidity.
