The Story: Produced by the historic Les Costières de Pomerols cooperative (founded in 1932), Domaine Saint-Peyre comes from sun-drenched vineyards planted on clay and limestone hillsides overlooking the Thau lagoon near the Mediterranean coast. The name Picpoul literally translates to "lip-stinger"—a historic nod to the grape's famously vibrant, high acidity. To capture that electric energy, the grapes are harvested at night to keep them cool, pressed gently, and fermented entirely in stainless steel to let the pure coastal terroir shine through.
