The Story: The Pavelot family has been crafting spectacular, terroir-driven wines in Savigny-lès-Beaune since the 1950s, with Jean-Marc and his son Hugues widely revered as two of the most trusted names in the entire appellation. While their Premier Crus are heavily sought after by collectors, this Bourgogne Rouge proves that a serious estate brings elite DNA to even their entry-level bottlings. The fruit is organically farmed from less than a hectare of vines split between deep, rich valley clay soils and a stony, high-altitude plot on Mont Battois. Following traditional practices, the grapes are fully destemmed, fermented with native wild yeasts, and matured for 10 to 12 months in seasoned, neutral French oak barrels to let the raw, earthy soul of the Côte de Beaune shine through entirely unaltered.
