The Story: Handcrafted by winemaker Philippe Nevoux, Domaine du Héron is named after the elegant local herons that have taken up residence around a small pond nestled among the estate's vines. The estate is certified organic and focuses entirely on traditional, low-intervention practices. This special cuvée, ‘Le Nid’ ("The Nest"), is sourced from a tiny 7-hectare vineyard of 50-year-old Vieilles Vignes (old vines) rooted in south-facing slopes of sandy limestone over a deep bed of ancient mica-schist. Following strict local tradition, the wine is aged sur lie (on its dead yeast cells) in stainless steel vats for 8 to 10 months with monthly bâtonnage (lees stirring). This extended lees contact acts as a natural preservative, allowing the wine to develop a gorgeous touch of richness without ever seeing a single splinter of oak.

It pours a very pale straw-yellow with subtle neon-green glints. On the palate, it is light-to-medium-bodied, surprising you with a supple, slightly creamy mid-palate texture from the lees contact. This initial roundness is immediately sliced open by a bracing, mouthwatering acidity and a salty line of iodine minerality, making it feel remarkably crisp, vertical, and refreshing as it glides into a clean, bone-dry finish.
