The Story: While Counoise is recognized as one of the historic blending grapes allowed in Châteauneuf-du-Pape—famously used to tame high alcohol and add fresh acidity—it is almost never bottled entirely on its own. For decades, the Autran family of Domaine de Piaugier sold the fruit from their prized, old-vine Counoise plot directly to the legendary Château de Beaucastel. However, in 1991, they realized this unique grape was far too spectacular to keep hidden away in a blend. Named "Ténébi", this cuvée is a rare standalone showcase of the variety. The hand-harvested grapes undergo a 28-day fermentation entirely in traditional cement tanks with no destemming (100% whole cluster), followed by aging in seasoned oak barrels for "two winters" before being bottled without filtration.
