The Story: Domaine Camille & Laurent Schaller is a brilliant, family-run estate based in the village of Préhy. While the Schaller name is widely celebrated for producing razor-sharp, mineral-driven white Chablis from Kimmeridgian limestone soils, this Bourgogne Rouge is a rare, delightful secret weapon. Laurent and his son Camille manage their vineyards with sustainable, low-intervention practices, rejecting chemical herbicides to keep their soils pure. Because their Pinot Noir vines are planted in the cool climate of northern Burgundy, the fruit retains an ethereal, energetic freshness. The Schallers ferment and age this wine for about 8 months entirely in temperature-controlled stainless steel tanks, completely bypassing oak to let the raw, cool-climate fruit and stony terroir take center stage.
