The story: It was 1989 when Cantina Valpolicella Negrar, a historic winery in Verona founded in 1933, decided to launch an articulated quality project, Domini Veneti, by identifying some particularly well-suited zones within the Valpolicella Classica area. The decision to focus on improving the quality of carefully selected grapes gave rise to the new Domìni Veneti line, which has since become a line showcasing the excellence not only of Valpolicella Classica DOCG and DOC wines, but also of other fine wines from Verona. On the whole, this is a project that reveals a heritage uniting traditions and research, new production techniques and originality, confirming the culture Italian wine.
Appassimento, the method used to produce Passito wines, is unique to Veneto. Grapes are picked and laid in the sun on mats to dry and raisinate. This is the same way the great Italian Amarone is made, and lends these added richness and depth.
