The Story: Tucked away in the heart of the picturesque Cher Valley, Château de Thésée rests on south-facing slopes running along the northern banks of the Cher River. This unique geographic sweet spot catches optimal sunshine, allowing the estate’s grapes to achieve perfect, early ripeness while maintaining their cool-climate snap. In 2022, this historic property (formerly known as Domaine du Bouc) was acquired by François Gilbert and Philippe Gaillard—the famous palates behind the globally revered Gilbert & Gaillard wine guide. Bringing over 35 years of elite industry expertise, they transitioned the estate to strict organic farming to let the soil do the talking. For their "La Closerie" cuvée, the grapes are hand-harvested from vines dug into super-fine silica soils. The juice is fermented at low temperatures in stainless steel and aged for eight months on its fine lees with regular bâtonnage (lees stirring), a deliberate touch that coaxes out unexpected luxury without a single splinter of oak.
