Jean-Marc Brocard Chablis Sainte Claire Vieilles Vignes
Pairs with: Curried salmon
Good for: Whiling away a pleasant late summer evening
Grape: Chardonnay
I am from: Burgundy, France
The story: Since its beginnings, Jean-Marc Brocard has been committed to a healthier culture, respectful of its environment. In 1997, a plot of 11 hectares of Chablis was planted in organic and biodynamic conditions. Today, some 60 hectares are now certified organic and 40 of these are biodynamic, making Domaine Jean-Marc Brocard one of the first wine producers with a focus on organic production in Chablis and indeed all of Burgundy.
Why you'll love me: On the nose, look for notes of lemon, mint and unripe mango. The palate is taut, balanced, and tangy, with a crisp, acid-driven finish.
