The Story: Named in homage to the Cathars—a 13th-century religious movement in Southern France whose resistance to dogma earned them the label of "heretics"—this cuvée carries an authentically rebellious spirit. The late André Iché, a legendary vigneron of Minervois, originally crafted this wine to demonstrate how gnarled, centenarian Carignan vines could yield lively, high-character reds rather than cheap bulk table wine. Today, his daughter Marie-Pierre Iché carries forward his legacy with equal devotion.

To craft "Les Hérétiques," Château d'Oupia uses a dual-vinification approach: a portion of whole-cluster Carignan undergoes carbonic maceration to extract explosive, fresh berry aromatics, while the remaining fruit undergoes a traditional extended maceration to build supple structure. Aged entirely in stainless steel and concrete vats without any oak intervention, the wine leaves the soul of the Languedoc completely unmasked.
