The Story: Founded in 1945 by the Simoni family, Cantine Monfort is an artisanal estate dedicated to sustainable mountain viticulture in the shadow of the Dolomites. Today led by Lorenzo Simoni alongside his children, the winery turns to Trentino’s cool alpine microclimates to cultivate Pinot Nero, a notoriously delicate grape that thrives in high-altitude vineyards. Cool mountain breezes from the north collide with warm currents from Lake Garda, creating wide day-to-night temperature swings that slow ripening and lock in bright natural acidity and delicate aromatic nuance.

In the cellar, winemakers handle the hand-harvested fruit with minimal intervention to preserve its pure mountain character. Following a gentle fermentation with light pump-overs, the wine matures in a combination of stainless steel tanks and seasoned French oak barrels. This gentle wood aging softens the structural frame while allowing the grape’s crunchy red berry aromatics, subtle floral perfume, and stony alpine minerality to shine with total clarity.
