Le Cabanon 2021 Prestige Pinot Noir
Pairs with: Roasted Chicken
Good for: Weeknights
Grape: Pinot Noir
I am from: Vin de Pays D'oc, France
The story: Le Cabanon is French for “shed” or “hut,” and it evokes the rustic nature of the producer’s approach. The small houses are often more than a shed for storing tools and implements. It is sometimes a place for the vineyard owners at times when there is a lot of work in the vineyard.
The vineyards of Le Cabanon can be found between Narbonne and Limoux in the direction of the Pyrenees. On the slightly higher plots there is always wind, which blows from the Mediterranean Sea or from the Atlantic and provides cooling in the vineyards, but also ensures that there are fewer harmful insects in the vineyards. Wines undergo modern temperature-controlled fermentation. The aim is to create a style of modern “clean wines” that retain the characteristics of the grape.
Why You’ll Love Me: Red fruit with medium body and some light plum notes; round and smooth finish with light tannins.
