The Story: Sacy is a tiny hamlet near Crézancy and Bue, where Karine Millet has just recently taken over the family domaine which includes four hectares of vines. Karine practices polyculture, the historical practice in Sancerre. Cow manure from the farm is used in the vineyards and the domaine is presently on the way to becoming certified organic. Karine practices sustainable viticulture - no herbicides or pesticides - and the soil here is all Teres Blanches, with vines averaging 30 years of age.
Why You’ll Love Me: Brimming with notes of fresh red berries, this rosé is fresh yet dry, with good structure and depth and just the right amount of acidity.
