The Story: Pascal Bellier has been working in Cheverny for more than thirty years. A graduate of the famed viticulture school of Beaune in Burgundy, he is the current steward of a family tradition on the banks of the Loire that has been handed down for generations. From 10 hectares of 20 year-old vines grown on a hill overlooking the Loire River, with soils of siliceous clay, limestone and chalk, the grapes are harvested in mid-September, directly pressed and then allowed to ferment for 12-15 days in stainless steel, before being set to rest for 3-4 months until bottling.
