Founded by brothers Dave and Will Willis, the distillery deeply embraces the historic, rugged terroir of New England. Disregarding the modern industry standard of producing bland, heavily filtered, and completely flavor-neutral white rums, the brothers set out to craft an unaged spirit with genuine, robust character. They utilize a premium, high-grade molasses base that is deliberately allowed to undergo an unconventionally long, slow fermentation in the chilly Northeast climate to let its flavors fully evolve. Meticulously distilled with precise "cuts" inspired by old-world Cognac techniques—purposely keeping select fruit-forward notes from the head of the distillation run—it captures a masterful harmony of 17th-century local heritage and modern American craft precision.
