Bedrock Wine Company Sonoma Cabernet Sauvignon
Pairs with: Charred ribeye steak basted with garlic butter, classic Korean beef sirloin, slow-braised short ribs over polenta, or a rustic wood-fired wild mushroom pizza tossed with fresh thyme.
Good for: Finding a serious, savory California Cabernet that completely skips syrupy, oak-drenched extraction in favor of fresh, mineral-driven tension; unlocking an "insider's secret" bottle from an elite producer that routinely drinks like a triple-digit allocation; or showing a Bordeaux devotee how beautifully Sonoma handles old-school restraint.
Grape: A traditional, focused blend of roughly 90% Cabernet Sauvignon, masterfully filled out with small splashes of Malbec and Cabernet Franc.
I am from: Sonoma County, California, USA (An elite patchwork of premium, sustainably and organically grown sites, blending fruit from their historic estate Bedrock Vineyard with prized, declassified barrels from legendary high-altitude mountain plots like Monte Rosso and Montecillo).
The Story: While Bedrock Wine Co. is globally revered as the ultimate preservationist powerhouse for ancient, century-old Zinfandel heritage field blends, founders Morgan Twain-Peterson MW and Chris Cottrell apply that exact same soulful, vineyard-first philosophy to the king of red grapes. In its earliest iterations, Bedrock’s Sonoma County Cabernet Sauvignon was a quiet cellar secret—an entry-level bottling created simply to gracefully utilize leftover barrels from their ultra-exclusive single-vineyard wines. However, recognizing the staggering quality of the fruit coming out of their historic estate plots, the team made a deliberate shift to transform this wine into a standalone, deeply intentional snapshot of classic Sonoma viticulture.
The backbone of this blend is built on well-farmed, organic fruit from the valley floor and steep mountain slopes. Rather than sourcing from generic, commercial acreage, Morgan pulls from world-class terroir—including the iron-rich soils of the historic Bedrock Vineyard and declassified lots from Monte Rosso and Montecillo, two of the most legendary mountain Cabernet sites in North America. In the cellar, the grapes are treated like royalty but handled with a remarkably light touch. Fermented in open-top tanks using only indigenous wild yeasts, the juice is tucked away into French oak barrels for aging. Crucially, Morgan caps the use of new French oak at a strict 10%. This minimalist, low-intervention approach ensures that the raw, aromatic soul and chiseled structure of the Sonoma terroir arrive in your glass entirely unmasked by sweet, smoky oak manipulation.
Why You'll Love Me: It is robust, beautifully structured, and incredibly vibrant—a full-bodied Cabernet Sauvignon that manages to feel remarkably light on its feet and driven by a cooling, stony energy. In the glass, it pours a deep, intense ruby-purple color. The nose is a beautifully expressive and sophisticated playground, instantly launching into a fragrant bouquet of fresh blackcurrants, cassis, and wild mulberries, seamlessly layered with elegant undertones of cedar cigar box, graphite, cracked black pepper, and a subtle, classic whiff of dried lavender and bay leaf.
On the palate, it delivers a spectacular, old-school structural ride. It registers with a dense, concentrated core of black cherries and espresso, but then masterfully contracts into a focused, highly athletic frame. Instead of defaulting to a flabby, jammy sweetness, a driving beam of juicy, mouthwatering acidity beautifully balances the weight. Firm, pleasurably grippy, and slightly dusty tannins hold the architecture perfectly together, sailing into a long, bone-dry finish highlighted by a savory trail of cocoa powder, aniseed, and a lingering, iron-laced mineral snap.
