The Story: Domaine Sylvain Mosnier traces its winemaking roots in the village of Beine, just west of Chablis proper, back to 1893. Today, the family estate—which holds HVE Level 3 environmental certification for its sustainable viticulture—is guided by Sylvain alongside his daughter Stéphanie. Together, they maintain an uncompromising commitment to preserving the raw, pristine voice of their historic terroir. Sylvain is famously uninterested in oak barrels, believing that wood interferes with Chablis's natural, crystalline precision.
In the cellar, the fruit undergoes gentle pneumatic pressing and gravity flow directly into temperature-controlled stainless steel and enamel tanks. Fermentation occurs with meticulous temperature control to lock in delicate aromas, followed by an extended aging period on fine lees through the winter and spring. This patient lees contact endows the wine with a subtle, silky mid-palate weight that perfectly balances its soaring, high-wire acidity and stony core.
