The secret to its vinous structure lies in Gardet’s cellar program. The base wine undergoes full alcoholic and malolactic fermentations in stainless steel, but 25% of the blend is composed of reserve wines aged for at least one year in massive, 50- to 100-year-old oak foudres. Once bottled, the cuvée rests on its fine lees for an extraordinary 6 years in the cellar before receiving a precise, low Brut dosage of 6 g/L. This prolonged aging unleashes a patinated complexity that bridges raw chalky energy with rich, baked-pastry indulgence.
