The region’s maritime climate, shaped by cool Pacific breezes and long, gentle summer days, slows grape development. This extended hang-time allows the vines to build layered aromatic complexity while preserving the grape's signature high natural acidity.

In the cellar, the winemaking team focuses on showcasing varietal balance and single-region expression. The hand-harvested grapes undergo gentle destemming and a cool, temperature-controlled fermentation to extract pure fruit character and supple, fine-grained tannins. The wine then matures for nine months in French oak barrels (using roughly 25% new wood), subtly layering warm spice, cedar, and velvety depth onto the vibrant berry core without masking the wine's intrinsic freshness.
