The Story: Founded in 1945 by the Simoni family, Cantine Monfort is an artisanal winery deeply tied to the dramatic alpine landscape of Trentino. Today led by Lorenzo Simoni alongside his children, the estate focuses on sustainable mountain viticulture, tending terraced vineyard plots carved into the steep hillsides around Trento and Lavis. In this northern Italian sanctuary, cool mountain winds descending from the Dolomites collide with warm air currents from Lake Garda, creating wide day-to-night temperature swings that allow Pinot Grigio to retain striking acidity while slowly building aromatic complexity.
In the cellar, Monfort prioritizes varietal clarity and alpine purity above all else. The hand-harvested grapes undergo gentle soft-pressing followed by a cool, temperature-controlled fermentation in stainless steel vats, completely bypassing oak barrels.
