The Story: Grown on a sun-drenched limestone plateau just off the coast of the Mediterranean, this wine is deeply rooted in southern French tradition. In the local dialect, Picpoul literally translates to "lip-stinger"—a playful nod to the grape's famously high, electric acidity. To preserve every drop of that signature, vibrant energy, the grapes are fermented entirely in temperature-controlled stainless steel tanks and aged briefly on their fine lees with no malolactic fermentation. It is a textbook expression of a historic seaside appellation where the regional motto might as well be "if it grows together, it goes together" (making it the undisputed soulmate to local Thau lagoon oysters).
