The Story: Founded in the late 1990s by brothers Panagiotis and Konstantinos Koukos, Koukos Winery is a boutique, eco-conscious estate tucked into the rolling hills of Achaia. The brothers built their winery around a commitment to organic viticulture and the rescue of rare, native Greek grapes. Among their most distinct varieties is Sideritis—a late-ripening, pink-skinned grape variety named after sidero (the Greek word for iron), a cheeky nod to its firm skin and the mineral-rich soils in which it thrives.

To craft their "Lydia" cuvée, the Koukos family hand-harvests the pink-tinged fruit at peak maturity to maintain high-wire acidity and subtle floral esters. In the cellar, the grapes are gently pressed and fermented under temperature control in stainless steel vats without any oak intervention. This minimal-intervention approach allows the grape's raw identity to shine through, creating a pale, bone-dry white that balances herbal complexity with sea-breeze freshness.
