The story! This devilish wine represents the more than 900 year history of winemaking tradition at Dievole. Spontaneously fermented in Slavonian oak with indigenous yeast strains, this piece of history is then aged in toasted french oak for 18 months before bottle-aging for at least 6 months.
In your mouth: My full-bodied mouthfeel balances gorgeously with tight acidity and ever-present tannins. Earthy notes of waxy rose-petal and violet intermingle delicately with black cherry and black currant, before giving way to my seductive minerality. Open me early: I only get better with air.
