In your mouth: Les Monts Damnes, or “the damned mountains” are named for the absurdly steep slopes that have its vineyard workers cursing day in and day out. However, these slopes allow most of the rainfall to run off, forcing the vines’ roots to dig deeper and deeper for hydration and pulling up intensely mineral flavors from the soil: thus, one of Sancerre’s most prestigious and sought-after subregions.
